Apple, Broccoli & Lentil Salad

Ingredients
- 1 head broccoli, cut into florets
- 2 green apples, core moved, quartered
- 1 red onion, sliced
- 1 tablespoons lemon zest
- 1/2 cup sultanas
- 400 grams lentils, drained
- 1 tablespoons lemon juice
- 2 tablespoons sweet chilli sauce
- 1/2 tablespoons grainy mustard
- 100 grams baby spinach
- 1 tablespoons sesame seeds
- 2 tablespoons olive oil
- 1 pinch salt
- 1 pinch pepper

- Step 1 of 4Preheat the oven to 180°C (200°C fan-forced).
- Step 2 of 4Onto an oven tray, place the broccoli, apples, onion, lemon zest and oil. Toss it all together and place it into the oven for 20 minutes until softened.
- Step 3 of 4Remove from the oven, and add the baby spinach, sultanas, salt, pepper and lentils. Then add the lemon juice, sweet chilli sauce and mustard and combine it all together.
- Step 4 of 4Transfer to a serving dish or large bowl and sprinkle with sesame seeds. Serve while still warm.
