Apple, Broccoli & Lentil Salad

Ingredients

  • 1 head broccoli, cut into florets
  • 2 green apples, core moved, quartered
  • 1 red onion, sliced
  • 1 tablespoons lemon zest
  • 1/2 cup sultanas
  • 400 grams lentils, drained
  • 1 tablespoons lemon juice
  • 2 tablespoons sweet chilli sauce
  • 1/2 tablespoons grainy mustard
  • 100 grams baby spinach
  • 1 tablespoons sesame seeds
  • 2 tablespoons olive oil
  • 1 pinch salt
  • 1 pinch pepper

Method

  1. Step 1 of 4
    Preheat the oven to 180°C (200°C fan-forced).
  2. Step 2 of 4
    Onto an oven tray, place the broccoli, apples, onion, lemon zest and oil. Toss it all together and place it into the oven for 20 minutes until softened.
  3. Step 3 of 4
    Remove from the oven, and add the baby spinach, sultanas, salt, pepper and lentils. Then add the lemon juice, sweet chilli sauce and mustard and combine it all together.
  4. Step 4 of 4
    Transfer to a serving dish or large bowl and sprinkle with sesame seeds. Serve while still warm.
