Apple & Mandarin Custard Cake
Apple & Mandarin Custard Cake is the perfect baking recipe for a tasty baked treat. Topped with sliced apple, in season mandarin wedges and also custard, this cake recipe looks as good as it tastes.
Ingredients
- 1 teaspoons vanilla
- 1 cup natural yoghurt
- 3 granny smith apples, peeled and sliced
- 2 mandarins, zested and cut into wedges
- 1 cup custard
- 1 tablespoons sliced almonds
- 3 eggs
- 150 grams butter, softened
- 1/2 cup caster sugar
- 1 1/2 cups self raising flour
- 1 teaspoons vanilla
- 1 cup natural yoghurt

- 1 cup custard
- 1 tablespoons sliced almonds
- 3 eggs
- 150 grams butter, softened
- 1/2 cup caster sugar
- 1 1/2 cups self raising flour
- Step 1 of 5Preheat the oven to 170°C (150°C fan-forced). Line a 23cm tin with paper.
- Step 2 of 5Cream the butter and sugar until light and fluffy. Add the eggs one at a time, and vanilla. Stir through the yoghurt, flour and mandarin zest.
- Step 3 of 5Spread half the batter into the base of the tin. Top with the sliced apple and mandarin wedges. Spread over the custard and top with the remaining batter. Sprinkle it with the almonds.
- Step 4 of 5Bake in the centre of the oven for 50 minutes until soft to the touch in the centre.
- Step 5 of 5Remove and cool completely. Serve!
