Apricot & Coconut Truffles

Ingredients
- 4 wheat biscuits
- 1 cup dried dates, soaked for 10 minutes in warm hot water
- 1/2 cup dried apricots, dried apricots
- 1 cup desiccated coconut, chopped
- 1 tablespoons orange zest
- 2 tablespoons honey
- 2 teaspoons cocoa
- 5 tablespoons coconut or melted dark chocolate
- 1/2 cup raw cashews

- Step 1 of 4Into a kitchen processor, place the wheat biscuits, drained dates, apricots, coconut, cashews, honey and cocoa, blitzing until the mixture comes together.
- Step 2 of 4Roll the mixture into walnut sized balls.
- Step 3 of 4To finish, roll half of the balls in desiccated coconut and dip the remaining into melted dark chocolate.
- Step 4 of 4Store in an airtight container in the fridge.
