Asparagus & Brie Puff Pastries

Ingredients
- 3 bunches asparagus, trimmed
- 2 sheets ready-rolled frozen puff pastry, partially thawed
- 125 grams wheel of brie, thickly sliced
- 1 egg, lightly beaten
- 1 lemon, zested and juiced
- 1 tablespoons honey
- 1/2 teaspoons thyme leaves
- 1 tablespoons extra virgin olive oil
- 3 bunches asparagus, trimmed

- 1 egg, lightly beaten

- Step 1 of 5Preheat oven to 220°C (200°C fan-forced). Line a baking tray with baking paper.
- Step 2 of 5Bring a saucepan of water to the boil. Blanch asparagus in the boiling water for 30 seconds or until just tender. Drain. Rinse under cold water to stop the asparagus cooking further. Drain well.
- Step 3 of 5Quarter each pastry sheet into 4 squares and place on tray. Top each square with asparagus and a slice of brie. Brush pastry edges with a little egg, then fold over to enclose filling. Brush pastry with egg.
- Step 4 of 5Bake for 15 minutes or until golden and crisp.
- Step 5 of 5To make the honey dressing, place the remaining ingredients in a small bowl and whisk to combine. Season with pepper. Serve puff pastries with honey dressing.
