Asparagus & Lemon Spaghetti
This simple Asparagus and Lemon Spaghetti pasta dish is light and full of flavour, perfect for a warm weather dinner or shared lunch.
Ingredients
- 500 grams spaghetti
- 2 bunches asparagus, cut into 2cm pieces
- 1 onion, chopped finely
- 2 cloves garlic, crushed
- 1 tablespoons ginger, grated
- 1 tablespoons thyme leaves
- 1 lemon, zest, 0.25 lemon juice
- 1 cup rocket or baby spinach
- 1 cup grated parmesan
- 2 tablespoons olive oil

- Step 1 of 4Bring a large pot of salted water to the boil. Cook the spaghetti as per packet instructions. With five minutes to go, add the asparagus to the pot. Drain.
- Step 2 of 4While the pasta is cooking, heat the oil in a large frying pan. Add onion, garlic and ginger and cook for 2 to 3 minutes to soften.
- Step 3 of 4Add the spaghetti to the frying pan along with thyme, lemon zest, lemon juice and spinach leaves or rocket. Season with salt and pepper.
- Step 4 of 4Serve hot with a generous sprinkle of Parmesan.
