Autumn Pear Salad with Maple Candied Walnuts

Ingredients
- 2 pears
- 120 grams leafy greens
- 2 sticks celery , sliced
- 1/2 cup Italian parsley leaves
- 100 grams feta
- 1 tablespoons poppy seeds
- 2 tablespoons flavourless oil
- 2 tablespoons lemon juice
- 1 tablespoons honey
- 1/2 tablespoons dijon mustard
- 1/2 cup maple syrup
- 1 cup walnut halves
- 2 pears

- Step 1 of 5Firstly, candy the walnuts. In a small pan bring the maple syrup to a simmer and continue to cook for 8-10 minutes until it becomes thick. Remove from the heat and stir through the walnuts. Spread onto a lined baking tray and allow to cool.
- Step 2 of 5Thinly slice the pears (avoiding the core) and squeeze over 1 tbs lemon juice to stop them browning.
- Step 3 of 5To your salad bowl, add the greens, celery, parsley, feta or blue cheese and then poppy seeds.
- Step 4 of 5In a small bowl, add the dressing ingredients together and stir to combine
