Avocado and Kūmara Brownie
Whip up a fudgy treat with this easy avocado and kūmara brownie recipe. Bake a rich, chocolatey slice the whole family will love.
Ingredients
- 1 cup sweet potato, roasted until soft and then mashed
- 1 avocado, pitted and peeled
- 2 eggs
- 1/2 cup cocoa
- 1/2 cup coconut sugar
- 4 tablespoons coconut oil
- 1/2 teaspoons baking powder
- 1/2 teaspoons baking soda
- 1/2 teaspoons sea salt
- 200 grams dark chocolate drops
- 2/3 cup coconut cream

- Step 1 of 9Brownie: Preheat oven to 180 degrees Celsius. Line the bottom of a 8" by 8" baking dish with baking paper.
- Step 2 of 9In a bowl, mash the kūmara and avocado together with a fork.
- Step 3 of 9In a food processor combine mashed kūmara and avocado along with remaining ingredients for brownies until smooth- try avoid over mixing. Spread batter into a 8" by 8" baking dish.
- Step 4 of 9Bake for 40 minutes
- Step 5 of 9Leave to cool before icing
- Step 6 of 9Icing: Melt 200g of Dark chocolate
- Step 7 of 9Add coconut cream to melted chocolate and whisk until smooth
- Step 8 of 9Pour over the cooled brownie
- Step 9 of 9Refrigerate until firm
