Avocado and Kūmara Brownie

Ingredients

  • 1 cup sweet potato, roasted until soft and then mashed
  • 1 avocado, pitted and peeled
  • 2 eggs
  • 1/2 cup cocoa
  • 1/2 cup coconut sugar
  • 4 tablespoons coconut oil
  • 1/2 teaspoons baking powder
  • 1/2 teaspoons baking soda
  • 1/2 teaspoons sea salt
  • 200 grams dark chocolate drops
  • 2/3 cup coconut cream
  • 1 cup sweet potato, roasted until soft and then mashed

Method

  1. Step 1 of 9
    Brownie: Preheat oven to 180 degrees Celsius. Line the bottom of a 8" by 8" baking dish with baking paper.

    In a bowl, mash the kūmara and avocado together with a fork.
  3. Step 3 of 9
    In a food processor combine mashed kūmara and avocado along with remaining ingredients for brownies until smooth- try avoid over mixing. Spread batter into a 8" by 8" baking dish.

    Bake for 40 minutes
  5. Step 5 of 9
    Leave to cool before icing
  6. Step 6 of 9
    Icing: Melt 200g of Dark chocolate
  7. Step 7 of 9
    Add coconut cream to melted chocolate and whisk until smooth

    Pour over the cooled brownie

    Refrigerate until firm
