Barbecued Sweetcorn with Smokey Mayo

Ingredients
- 4 sweetcorn, husk removed
- 1 clove garlic, crushed
- 1/2 teaspoons smoked paprika
- 1/2 cup mayonnaise
- 1 pinch chilli flakes
- 1/4 cup chopped coriander
- 1 tablespoons chipotle sauce
- 1/4 teaspoons ground cumin
- 20 grams butter, at room temperature
- 1/4 teaspoons flakey salt
- 4 sweetcorn, husk removed

- Step 1 of 5Preheat a barbecue to a high heat.
- Step 2 of 5In a small bowl, combine the butter, garlic, cumin, paprika, chilli flakes and 1 tablespoon of coriander. Spread half on the cobs and reserve the rest for serving.
- Step 3 of 5Combine the mayonnaise, chipotle, paprika and 2 tablespoon of coriander in a bowl and set aside.
- Step 4 of 5Place the cobs onto the preheated barbecue cooking for 10-15 minutes, turning as they cook and char.
- Step 5 of 5Serve hot with a knob of butter, a side of mayo, a sprinkle of salt and an extra garnish of coriander.
