BBQ Lamb with Greek Style Fries
Fire up the barbecue and enjoy this simple but delicious BBQ Lamb with Greek Style Fries. The feta and oregano introduce Greek style flavours that pair perfectly with New Zealand lamb and make the fries something special!
Ingredients
- 1 teaspoons oregano
- 4 medium potatoes, skin on, cut into thick chips
- 440 grams lamb steaks
- 3 cloves garlic, crushed
- 100 grams feta
- 2 tablespoons olive oil
- 1 pinch salt
- 1 pinch pepper
Dressing
- 100 grams feta, crumbled
- 2 teaspoons lemon zest
- 2 teaspoons lemon juice
- 1/2 cup yoghurt
- 1 pinch chilli flakes
Salad
- 3 cups spinach, shredded
- 1/2 red onion, thinly sliced
- 2 carrots, grated
- 1 avocado, sliced
- 1 teaspoons oregano
- 4 medium potatoes, skin on, cut into thick chips

- 2 tablespoons olive oil
- 1 pinch salt
- 1 pinch pepper
Dressing
- 100 grams feta, crumbled
- 2 teaspoons lemon zest
- 2 teaspoons lemon juice
- 1/2 cup yoghurt
- 1 pinch chilli flakes
Salad
- 3 cups spinach, shredded
- 1/2 red onion, thinly sliced
- 2 carrots, grated
- 1 avocado, sliced
- Step 1 of 8Preheat oven to 200°C. Line a baking tray with paper.
- Step 2 of 8Cut the potatoes into thick 2cm sticks or wedges and spread out on the tray. Drizzle with 1 tablespoon olive oil. Place into the oven for 15 minutes.
- Step 3 of 8For the dressing, blitz together the feta, lemon juice, yoghurt and a pinch of chilli flakes to taste.
- Step 4 of 8Remove chips from oven, toss and sprinkle over 2 cloves garlic, feta and half of the oregano and return to the oven for 10-15 minutes until crisp and golden.
- Step 5 of 8Rub the lamb steaks with remaining 1 Tablespoon olive oil, the rest of the oregano and 1 clove garlic.
- Step 6 of 8Heat a BBQ or frying pan to a high heat. Cook the lamb for 4 minutes each side or until done to your liking. Season the lamb then let it rest for 5 minutes before serving.
- Step 7 of 8To make the salad, combine the spinach, onion and carrots in a bowl.
- Step 8 of 8Serve the hot potatoes, steak and salad with a dollop of dressing.
