Bean Stuffed Kūmara
You'll forget all about stuffed potatoes with these Bean Stuffed Kūmara! Perfect as a quick and easy main or side, this recipe makes the Kiwi favourite even tastier!
Recipe Tip Cook the pieces you slice from the top alongside the stuffed kūmara.
Ingredients
- 4 medium red kūmara
- 1 cup grated tasty cheese
- 2 spring onions, sliced
- 4 tablespoons sour cream
- 420 grams bean mix
- 1 pinch salt
- 1 pinch pepper

- Step 1 of 6Preheat an oven to 180°C (160°C fan-forced)
- Step 2 of 6Using a fork, prick the kūmara a few times. Place onto a tray, rub with a little oil. Place into the oven for 1 hour 30 or until cooked through. Remove from oven and allow to cool.
- Step 3 of 6When cool enough to handle, slice the top off each. Scoop out the inside carefully without tearing the skin, and place filling into a large bowl. Add the bean mix, half the cheese and spring onions, reserving a little for garnish. Season with salt and pepper.
- Step 4 of 6Return the filling to the kūmara, piling it up, and sprinkle over the remaining cheese.
- Step 5 of 6Bake for a further 20 minutes until golden brown and hot through.
- Step 6 of 6Serve hot with a dollop of sour cream and garnish with remaining spring onion
