Beef & Bean Lettuce Burgers with Avocado Smash

Ingredients
- 350 grams beef mince
- 400 grams red kidney beans, drained, rinsed, mashed coarsely
- 1 teaspoons paprika
- 1/4 cup cheese, grated
- 1 red onion, grated
- 1 clove garlic, crushed
- 1 egg
- 1 cup crushed plain rice crackers or breadcrumbs
- 1 pinch salt and pepper
- 4 small ripe tomatoes, diced
- 2 tablespoons fresh coriander leaves, roughly chopped
- 2 small avocados
- 1 tablespoons lime juice
- 2 tablespoons olive oil
- 4 leaves iceberg lettuce
- 1 teaspoons ground cumin

- Step 1 of 5In a large bowl, combine beef mince, beans, paprika, cumin, cheese, onion, garlic, egg and crackers or breadcrumbs. Season with salt and pepper. Shape mixture into 4 flat patties and refrigerate for 30 minutes.
- Step 2 of 5In a small bowl, combine tomato and coriander. Season to taste.
- Step 3 of 5In a medium bowl, mash avocado and lime juice together until smooth. Season to taste.
- Step 4 of 5In a large frying pan, heat oil over a medium heat. Cook patties for 5 minutes on each side or until browned and cooked through. Cover to keep warm.
- Step 5 of 5Serve patties on lettuce leaves, topped with avocado, then tomato mixture. Sprinkle with extra smoked paprika and coriander.
