Beef Nachos

Recipe Tip Try using premium mince which has less fat. You could also try adding some grated carrot, mushrooms or capsicum to add more vegetables to your meal.
Ingredients
- 500 grams beef mince
- 35 grams mild taco seasoning
- 400 grams canned red kidney beans, drained
- 200 grams canned diced tomatoes
- 220 grams corn chips
- 1 cup grated cheese
- 125 grams sour cream
- 1 tomato, chopped
- 1 tablespoons chopped parsley
- 1 red onion, chopped
- 1 clove garlic, chopped
- 1 pinch salt
- 1 pinch pepper
- 1 tablespoons oil
- 500 grams beef mince
- 35 grams mild taco seasoning
- 400 grams canned red kidney beans, drained
- 200 grams canned diced tomatoes
- 220 grams corn chips
- 1 cup grated cheese
- 125 grams sour cream
- 1 tomato, chopped
- 1 tablespoons chopped parsley
- 1 red onion, chopped
- 1 clove garlic, chopped
- 1 pinch salt
- 1 pinch pepper
- 1 tablespoons oil
- Step 1 of 6Preheat oven to 180°C (160ºC fan-forced).
- Step 2 of 6Heat oil in a frying pan over medium heat. Add onion and garlic cook for 3 minutes or until softened. Add mince to brown all over. Stir through the taco seasoning and cook for a further 2 minutes.
- Step 3 of 6Add kidney beans, then the tomatoes and simmer for five minutes until thickened. Season with salt and pepper.
- Step 4 of 6Into a large baking dish place corn chips, mince mixture and sprinkle over the cheese.
- Step 5 of 6Place into the oven and bake until the cheese is nice and golden.
- Step 6 of 6Serve hot with sour cream and a sprinkle of parsley and tomato.
