Beef Satay Noodles

Treat your taste buds with Beef Satay Noodles. This recipe is full of beef, broccolini, carrots, beansprouts, coriander and noodles, and is also super easy to prepare – lunch or dinner will be served in no time!

Ingredients

  • 450 grams sirloin steak, trimmed fat
  • 1/2 tablespoons finely grated palm sugar
  • 125 grams bean sprouts
  • 1 tablespoons fish sauce
  • 1 cup coconut milk
  • 1 large onion, cut into wedges
  • 3 cloves garlic, minced
  • 1 carrot, peeled and cut into ribbons
  • 1/4 cup coriander leaves
  • 250 grams dried thin egg noodles
  • 2 tablespoons peanut oil
  • 1 red chilli, seeds removed and chopped
  • 1 tablespoons finely grated ginger
  • 1/2 cup crunchy peanut butter
  • 1 bunch broccolini, cut into bite-sized pieces
  • 3/4 cup water
  • 2 tablespoons light soy sauce
  • 1 tablespoons salt
  • 1 tablespoons pepper

Method

  1. Step 1 of 4
    Place noodles in a bowl, cover with boiling water and leave for 5 minutes until almost tender. Separate with a fork then drain and rinse under cold water.
  2. Step 2 of 4
    Heat 1 tablespoon of the oil in a saucepan over medium-high heat. Cook chilli and ginger for 2 minutes. Add peanut butter, soy sauce, palm sugar, water, fish sauce and coconut milk. Whisk to combine. Reduce heat to low.
  3. Step 3 of 4
    Meanwhile, heat remaining oil in wok or frying pan. Season steak with sea salt and cracked black pepper and cook for 1 minute on each side for medium rare. Transfer to board to rest. (The beef may look rare after you've fried it but once sliced and stirred through the noodles, it will continue to cook.)
  4. Step 4 of 4
    Cook onion and broccolini in a frying pan for 2 minutes. Add garlic and carrot. Cook for 2 minutes. Add noodles and most of the peanut sauce. Simmer for 1 minute.
