Black Bean Burritos
This recipe for Black Bean Burritos is a dish that the whole family will love and uses familiar pantry staples. Serve with salsa or sour cream.
Ingredients
- 1 onion, chopped
- 3 cloves garlic, crushed
- 1 carrot, grated
- 2 teaspoons cumin
- 2 teaspoons coriander seeds
- 2 teaspoons paprika
- 1 pinch chilli flakes
- 400 grams chopped tomatoes
- 400 grams black beans, not drained
- 400 grams red kidney beans, drained
- 1 cup coriander, chopped
- 6 tortilla wraps
- 1/2 cup sour cream (lite)
- 1 cup grated cheese
- 2 tablespoons olive oil

- 1 cup grated cheese

- Step 1 of 10Preheat an oven to 180°C.
- Step 2 of 10In a large pot warm the oil. Add the onion, garlic and carrot cooking for 5 minutes to soften.
- Step 3 of 10Stir through the cumin, coriander and paprika and cook for 1 minute.
- Step 4 of 10Add the tomatoes, black beans with their juice and the kidney beans. Simmer for 20 minutes stirring occasionally until thickened
- Step 5 of 10Remove from heat and cool for 10 minutes.
- Step 6 of 10Once cooled, stir through the coriander, reserving a little for garnish.
- Step 7 of 10Place six wraps on a clean bench. Spoon the mixture evenly into the middle of each wrap, then roll and place onto a large baking tray.
- Step 8 of 10Smother a tablespoon of sour cream onto the top of each and sprinkle over the cheese.
- Step 9 of 10Bake for 25 minutes until crispy and golden.
- Step 10 of 10If desired, garnish with remaining coriander, extra sour cream or tomato salsa!
