Blueberry Bread & Butter Pudding

Ingredients

  • 2 cups cream, thickened
  • 2 teaspoons vanilla extract
  • 1/2 cup icing sugar
  • 125 grams blueberries, if frozen thaw and drain before use
  • 6 slices white bread
  • 1/4 teaspoons ground cinnamon
  • 100 grams butter
  • 5 eggs
  • 1/3 cup caster sugar
  • 3 cups milk
  • 2 cups cream, thickened
  • 2 teaspoons vanilla extract
  • 1/2 cup icing sugar
  • 125 grams blueberries, if frozen thaw and drain before use
  • 6 slices white bread
  • 1/4 teaspoons ground cinnamon
  • 100 grams butter
  • 5 eggs
  • 1/3 cup caster sugar
  • 3 cups milk

Method

  1. Step 1 of 4
    Preheat oven to 200°C (180°C fan-forced). Lightly grease a 1L-capacity ovenproof dish with 1/2 Tbsp of the butter.
  2. Step 2 of 4
    Generously spread both sides of the bread slices with the remaining butter and use to cover the base of the dish, overlapping slices to fit.
  3. Step 3 of 4
    In a medium bowl, whisk eggs, milk, sugar, cinnamon and vanilla. Evenly cover the bread with this mixture and let sit until the mixture is almost completely absorbed.
  4. Step 4 of 4
    Scatter over blueberries and bake for 40 minutes or until golden and the custard is set. Dust with icing sugar and serve with cream.
