Caramelised Peaches with Lemon Chicken

Ingredients

  • 1 red onion, chopped
  • 2 cloves garlic, crushed
  • 1 tablespoons ginger, grated
  • 2 tablespoons fresh thyme
  • 2 stems fresh thyme leaves
  • 3 peaches, cut into wedges
  • 2 teaspoons lemon zest
  • 1/4 cup lemon juice
  • 1/2 cup chicken stock
  • 450 grams chicken thighs
  • 2 tablespoons olive oil
  • 1 red onion, chopped

  • 2 stems fresh thyme leaves
  • 3 peaches, cut into wedges
  • 2 teaspoons lemon zest
  • 1/4 cup lemon juice
  • 1/2 cup chicken stock
  • 450 grams chicken thighs
  • 2 tablespoons olive oil

Method

  1. Step 1 of 4
    In a large frying pan, heat 1 tablespoon of the oil. Add the onion, garlic, ginger and thyme cooking for 5 minutes to soften. Add sliced peaches, vinegar and lemon zest, cooking for 10 minutes to caramelise and cook through. Remove from the pan.
  2. Step 2 of 4
    Add the remaining oil to the pan and add the chicken thighs. Brown chicken on both sides, turning after 5 minutes and cooking for a further 5 minutes or until cooked through and golden and caramelised in colour.
  3. Step 3 of 4
    Add the peaches back to the pan, along with the lemon juice and stock, tossing all ingredients well together.
  4. Step 4 of 4
    Serve hot garnished with extra fresh thyme leaves.
