Carrot, Apple & Ginger Loaf

Ingredients

  • 1 ripe banana, mashed
  • 1/4 cup peanut oil
  • 1 cup grated carrot
  • 1 cup grated apple
  • 2 tablespoons grated fresh ginger
  • 1 teaspoons cinnamon
  • 2 eggs
  • 1/4 cup brown sugar
  • 100 grams butter, melted
  • 1 1/2 cups plain flour
  • 1 1/2 teaspoons baking powder

Method

  1. Step 1 of 4
    Preheat an oven to 170°C (150°C fan-forced). Line a loaf tin with baking paper.
  2. Step 2 of 4
    Into a medium sized bowl place the eggs, banana, sugar, butter and oil, combining well. Stir through the carrot and apple.
  3. Step 3 of 4
    Into another bowl place the flour, baking powder, ginger and cinnamon. Add the wet ingredients to the dry, stirring to combine.
  4. Step 4 of 4
    Pour the mix into the loaf tin. Place into the oven for 45 minutes or until a skewer comes out clean. Remove and cool in the tin before serving.
