Carrot Mac & Cheese Bites

Ingredients

  • 1 large brown onion, coarsely grated
  • 3 medium carrots, coarsely grated
  • 3 cups milk
  • 1 cup grated pizza cheese
  • 3 cups macaroni, cooked
  • 1 bunch chives, finely chopped
  • 2 tablespoons extra virgin olive oil
  • 1/3 cup plain flour

  • 1 cup grated pizza cheese
  • 3 cups macaroni, cooked
  • 1 bunch chives, finely chopped
  • 2 tablespoons extra virgin olive oil
  • 1/3 cup plain flour

Method

  1. Step 1 of 4
    Preheat oven to 200°C (180°C fan-forced). Grease a 12-hole, 1/3-cup capacity muffin pan.
  2. Step 2 of 4
    Heat oil in a large saucepan over medium heat. Cook onion and carrot for 10 minutes, stirring, or until softened. Sprinkle over the flour, then stir for 1 minute or until combined. Gradually add milk, stirring to combine. Bring to a simmer, then cook for 10 minutes or until the mixture has thickened. Remove pan from heat.
  3. Step 3 of 4
    Fold in cheese, macaroni and 3/4 of the chives until the cheese has melted. Spoon mixture into muffin pan. Sprinkle with half of the remaining chives.
  4. Step 4 of 4
    Bake for 25 minutes or until golden brown. Cool in pan for 10 minutes. Serve topped with remaining chives.
