Carroty Muffins

Ingredients

  • 2 cups wholemeal self raising flour
  • 1 teaspoons baking powder
  • 1/2 cup brown sugar
  • 1 teaspoons cinnamon
  • 1/2 teaspoons baking soda
  • 2 eggs, beaten
  • 90 grams margarine, melted
  • 90 mL prepared S-26 GOLD Toddler milk
  • 1 cup courgette, grated
  • 1/2 cup sultanas
  • 1 cup carrot, peeled, grated

Method

  1. Step 1 of 6
    Pre-heat oven to 200°C (180°C fan forced).
  2. Step 2 of 6
    Mix together first 5 ingredients.
  3. Step 3 of 6
    Make a well in the centre of the dry ingredients; add margarine and milk. Mix until consistency is like dough.
  4. Step 4 of 6
    Fold through the carrot, courgette and sultanas, until mixed well. Place mixture into greased muffin or patty cake tray.
  5. Step 5 of 6
    Bake for 25-30 minutes.
  6. Step 6 of 6
    Turn out muffins and cool on a wire rack.
