Ceviche Lettuce Cups

Whether you're taking a plate, or taking a seat, these Ceviche Lettuce Cups are an easyfinger food that's sure to be a favourite of the fam. Prepared in just 20 minutes!
Recipe Tip Lime juice can be replaced with lemon.

Ingredients

  • 200 grams white fish, cut into 1cm cubes
  • 1/4 cup lime juice
  • 1 teaspoons fish sauce
  • 1/2 telegraph cucumber, seeds removed
  • 1/2 red chilli, finely chopped
  • 1/2 avocado, diced small
  • 1/2 mango, peeled and cubed
  • 1/4 red onion, finely chopped
  • 1/4 cup coriander, chopped
  • 12 baby cos leaves
  • 1 lime, cut into wedges
  • 1 teaspoons sugar
  • 1 pinch salt and pepper

Method

  1. Step 1 of 4
    Place the fish, 1⁄4 cup lime juice, fish sauce, and sugar into a glass bowl. Stir to combine and leave to sit for 30 minutes. If not using straight away, cover and refrigerate.
  2. Step 2 of 4
    Dice the cucumber and place it into another bowl. Add the chilli, avocado, mango, red onion, coriander, and one Tbsp lime juice.
  3. Step 3 of 4
    Drain the fish and add to the vegetables. Season with salt and pepper.
  4. Step 4 of 4
    To serve, place the cos leaves onto a platter and add a spoonful of mixture to each leaf. Garnish with coriander and lime wedges.
