Cheat's Courgette Lasagne

Ingredients
- 1 brown onion, finely chopped
- 3 cloves garlic, crushed
- 60 grams baby spinach leaves
- 400 grams napolitana pasta sauce
- 2 courgettes, peeled into ribbons
- 375 grams fresh lasagne sheets, cut crossways into 4.5cm-wide strips
- 220 grams traditional bocconcini or mozzarella, drained, halved
- 40 grams parmesan, finely grated
- 1/4 bunch basil, leaves picked
- 2 tablespoons extra virgin olive oil

- 1/4 bunch basil, leaves picked
- 2 tablespoons extra virgin olive oil
- Step 1 of 4Heat oil in a 22.5cm (6cm deep) round ovenproof frying pan over medium-high heat. Cook onion and garlic for 3 minutes, stirring, or until onion has softened. Add spinach and cook for 1 minute, stirring, or until wilted.
- Step 2 of 4Combine pasta sauce and 1 1/2 cups of water in a jug. Add courgette and pasta to pan, then pour over sauce mixture and stir to coat pasta. Bring to the boil. Reduce heat to medium and simmer, covered, for 5 minutes. Uncover and simmer for 5 minutes or until pasta is just tender. Remove pan from heat.
- Step 3 of 4Preheat grill to high. Scatter lasagne with bocconcini, Parmesan and half of the basil. Grill for 4 minutes or until cheese is golden and has melted.
- Step 4 of 4Top with remaining basil, then serve.
