Cheat's Courgette Lasagne

Ingredients

  • 1 brown onion, finely chopped
  • 3 cloves garlic, crushed
  • 60 grams baby spinach leaves
  • 400 grams napolitana pasta sauce
  • 2 courgettes, peeled into ribbons
  • 375 grams fresh lasagne sheets, cut crossways into 4.5cm-wide strips
  • 220 grams traditional bocconcini or mozzarella, drained, halved
  • 40 grams parmesan, finely grated
  • 1/4 bunch basil, leaves picked
  • 2 tablespoons extra virgin olive oil

Method

  1. Step 1 of 4
    Heat oil in a 22.5cm (6cm deep) round ovenproof frying pan over medium-high heat. Cook onion and garlic for 3 minutes, stirring, or until onion has softened. Add spinach and cook for 1 minute, stirring, or until wilted.
  2. Step 2 of 4
    Combine pasta sauce and 1 1/2 cups of water in a jug. Add courgette and pasta to pan, then pour over sauce mixture and stir to coat pasta. Bring to the boil. Reduce heat to medium and simmer, covered, for 5 minutes. Uncover and simmer for 5 minutes or until pasta is just tender. Remove pan from heat.
  3. Step 3 of 4
    Preheat grill to high. Scatter lasagne with bocconcini, Parmesan and half of the basil. Grill for 4 minutes or until cheese is golden and has melted.
  4. Step 4 of 4
    Top with remaining basil, then serve.
