Cheat's Sausage Pot Pies

Ingredients

  • 700 grams potatoes, peeled and cut into pieces
  • 1 1/2 cups frozen mixed vegetables
  • 6 beef sausages
  • 550 grams devilled sausage simmer sauce
  • 1 1/2 tablespoons olive oil
  • 1 tablespoons butter
  • 3 tablespoons milk

  • 550 grams devilled sausage simmer sauce
  • 1 1/2 tablespoons olive oil
  • 1 tablespoons butter
  • 3 tablespoons milk

Method

  1. Step 1 of 4
    In a large pot of salted water, boil the potatoes until tender. Drain water. Add butter and milk, and mash. Season well and set aside.
  2. Step 2 of 4
    While the potatoes are boiling, heat 1 Tbsp oil in a large frying pan over medium-high heat. Cook sausages, turning, for 8-10 minutes or until browned. Transfer to a chopping board and thinly slice sausages diagonally.
  3. Step 3 of 4
    Add sauce and vegetables to pan. Reduce heat to medium, then simmer for 5 minutes or until sauce slightly thickens. Add sausage to sauce, stirring to combine.
  4. Step 4 of 4
    Preheat oven grill on medium-high. Spoon sausage mixture among 4 x 1½-cup capacity ramekins, then top with a spoonful of mash. Drizzle with remaining oil and season. Grill for 5 minutes or until golden. Serve.
