Chicken & Cashew Stir-fry
Chicken, vegetables, cashews, rice, garlic and a tablespoon of soy sauce and peanut oil are all you need for this chicken stir-fried dish that tastes even better than it looks.
Ingredients
- 1 tablespoons peanut oil
- 2 cloves garlic, crushed
- 400 grams chicken breasts or tenderloins, sliced
- 600 grams stir fry mixed vegetables
- 2 cups cooked brown rice
- 1/2 cup cashews
- 2 tablespoons salt-reduced soy sauce

- Step 1 of 2Heat oil in a medium saucepan over medium heat. Add garlic and chicken and stir-fry for 5 minutes or until chicken is cooked through. Add vegetables and cook, stirring, for 2-3 minutes or until vegetables are tender. Add soy sauce and stir through. Remove from heat.
- Step 2 of 2Divide rice among serving bowls and top with stir fried chicken and vegetables. Garnish with cashews to serve.
