Chicken Katsu Bowl
With its crunchy chicken tenders and crispy coleslaw, Chicken Katsu Bowl makes for a fresh meal that's also quick and easy.
Ingredients
- 4 chicken tenders
- 250 grams microwave brown rice
- 2 cups pre-made coleslaw
- 2 tablespoons sesame seeds, toasted
- 1 pinch salt
- 1 pinch pepper
- 2 tablespoons mayonnaise
Katsu Sauce
- 2 tablespoons tomato sauce
- 1 tablespoons worcestershire sauce
- 1 tablespoons soy sauce
- 1 tablespoons white vinegar
- 2 tablespoons white sugar
- 1/2 teaspoons Dijon mustard
- 4 chicken tenders

- Step 1 of 6Preheat an oven to 180°C (160°C fan-forced).
- Step 2 of 6Place 4 chicken tenders onto a baking tray. Cook for 20 minutes until golden brown.
- Step 3 of 6In a large bowl, combine the coleslaw and sesame seeds. Season with salt and pepper.
- Step 4 of 6Heat the rice as per the instructions on the packet.
- Step 5 of 6To make the katsu sauce, combine all ingredients in a bowl.
- Step 6 of 6To assemble, place the hot rice, coleslaw and then sliced chicken tenders into bowls. Drizzle with katsu sauce and mayonnaise.
