Chorizo & Capsicum Gnocchi

Ingredients

  • 500 grams pre-made gnocchi
  • 1/2 red onion, sliced
  • 2 chorizo sausages, sliced
  • 500 grams pasta sauce
  • 1 small red capsicum, sliced
  • 1/4 cup fresh basil
  • 1 tablespoons oil
  • 1 pinch salt
  • 1 pinch pepper
  • 500 grams pre-made gnocchi

  • 1/4 cup fresh basil
  • 1 tablespoons oil

Method

  1. Step 1 of 5
    In a large pot, bring lightly salted water to the boil.
  2. Step 2 of 5
    Add gnocchi, and cook for 6 to 8 minutes or until tender. The gnocchi will rise to the surface once cooked. Drain, reserving 1/4 cup of the liquid.
  3. Step 3 of 5
    In a large frying pan, heat the oil, and cook the onion and capsicum for 2-3 minutes or until it begins to soften. Add the chorizo and cook for a further 2-3 minutes or until the chorizo begins to brown.
  4. Step 4 of 5
    Add the gnocchi, pasta sauce and reserved water to the pan. Season and stir together to combine.
  5. Step 5 of 5
    Allow to simmer for 5 minutes before serving. Serve with fresh basil.
