Chorizo & Capsicum Gnocchi
With the combination of the salty chorizo and the sweetness of capsicum, this recipe for Chorizo & Capsicum Gnocchi is a pasta dish that will have you coming back for more.
Ingredients
- 500 grams pre-made gnocchi
- 1/2 red onion, sliced
- 2 chorizo sausages, sliced
- 500 grams pasta sauce
- 1 small red capsicum, sliced
- 1/4 cup fresh basil
- 1 tablespoons oil
- 1 pinch salt
- 1 pinch pepper
- 500 grams pre-made gnocchi

- Step 1 of 5In a large pot, bring lightly salted water to the boil.
- Step 2 of 5Add gnocchi, and cook for 6 to 8 minutes or until tender. The gnocchi will rise to the surface once cooked. Drain, reserving 1/4 cup of the liquid.
- Step 3 of 5In a large frying pan, heat the oil, and cook the onion and capsicum for 2-3 minutes or until it begins to soften. Add the chorizo and cook for a further 2-3 minutes or until the chorizo begins to brown.
- Step 4 of 5Add the gnocchi, pasta sauce and reserved water to the pan. Season and stir together to combine.
- Step 5 of 5Allow to simmer for 5 minutes before serving. Serve with fresh basil.
