Classic Scones

Classic scones are a handy recipe to master. You'll be able to serve up fluffy golden scones for afternoon tea, potlucks, or anytime you want a tasty treat. Made with staple ingredients, all you'll need to add is a smothering of cream and jam.

Ingredients

  • 1 1/2 cups whipped cream
  • 3/4 cup jam
  • 60 grams butter salted, cubed
  • 1 1/4 cups milk
  • 3 cups self raising flour
  • 1/2 teaspoons table salt

Method

  1. Step 1 of 10
    Preheat oven to 230°C (210°C fan-bake).
  2. Step 2 of 10
    Lightly grease and flour a baking tray or line with baking paper.
  3. Step 3 of 10
    Sift flour, baking powder (if using plain flour) and salt into a bowl.
  4. Step 4 of 10
    Rub butter into flour using just your fingertips, until the mixture resembles breadcrumbs.
  5. Step 5 of 10
    Add milk all at once, mix in quickly with a round-bladed knife to form a soft dough. Add more milk if necessary.
  6. Step 6 of 10
    Turn dough out onto a floured surface and knead lightly by turning and pressing with heel of hand 3 or 4 times.
  7. Step 7 of 10
    Pat or gently roll out to a 2cm-thick round. Cut into 4-5cm rounds with a floured cutter, re-rolling offcuts.

    Place on baking tray, brush tops with extra milk.

    Bake for 12-15 minutes, until golden and well risen.

    Serve with whipped cream and jam.
