Cottage Pie with Cauliflower Topping
Feed the family for less with this tasty cottage pie topped with cheesy cauliflower. It’s a quick, healthy meal that hits the spot.
Ingredients
- 1 onion, diced
- 1 carrot, grated
- 1 tablespoons dried mixed herbs
- 1 cauliflower, cut into florets
- 2 eggs
- 1 cup grated cheese
- 2 cloves garlic, diced
- 400 grams canned diced tomatoes
- 2 tablespoons cream
- 750 grams beef mince
- 1 tablespoons oil

- Step 1 of 5Preheat the oven to 200°C.
- Step 2 of 5Place a large fry pan onto a medium to high heat and add the oil. Add onion and garlic and cook for about 5 minutes until soft and translucent.
- Step 3 of 5Add the beef mince and mixed herbs and cook until the mince is browned. Season and add the canned tomatoes, carrot and combine.
- Step 4 of 5Meanwhile, place the cauliflower into a saucepan of salted boiling water and cook until tender. Drain and place in a food processor. Add the eggs and cream and purée until smooth but still with a little bit of texture. Season with salt and pepper to taste.
- Step 5 of 5Place the mince on the bottom of an ovenproof dish, spoon the cauliflower on top, sprinkle with cheese and bake in the oven until golden and bubbling.
