Crispy, Twice-cooked Potatoes with Confit Garlic Butter

Ingredients

  • 8 large agria potatoes
  • 1 head garlic, cloves peeled
  • 2 sprigs fresh rosemary
  • 200 grams butter
  • 1 tablespoons olive oil

Method

  1. Step 1 of 8
    Preheat oven to 120॰C.
  2. Step 2 of 8
    Add oil to a pot with the garlic cloves and cook on 120॰C for two hours until the garlic is soft and mushy.
  3. Step 3 of 8
    Peel and cut potatoes into quarters. Boil in salted water until just cooked through.
  4. Step 4 of 8
    Steam dry the potatoes through a colander.
  5. Step 5 of 8
    Heat a tray with oil in the oven, once oil is hot add the potatoes.

    Cook at 200॰C until crispy.

    Remove garlic cloves from oil and mash into a paste. Combine soft butter and salt. Toss over the potatoes once cooked.

    Cut chives to garnish potatoes, season with salt and pepper.
