Cucumber Spiral Salad

Cucumber Spiral Salad is a fresh and tasty side packed full of flavour! Ready in 15 minutes, this easy salad recipe is perfect as lunch for one, or as a side when entertaining this summer.

Ingredients

  • 2 tablespoons lemon juice
  • 2 teaspoons soy sauce
  • 2 teaspoons fish sauce
  • 1 teaspoons fresh ginger, grated
  • 1/2 red chilli, finely chopped
  • 2 teaspoons sesame oil
  • 1 telegraph cucumber
  • 1 tablespoons toasted sesame seeds
  • 1 spring onion, finely chopped
  • 1/2 cup coriander leaves, chopped
  • 2 teaspoons white sugar
  • 2 tablespoons lemon juice
  • 2 teaspoons soy sauce
  • 2 teaspoons fish sauce
  • 1 teaspoons fresh ginger, grated
  • 1/2 red chilli, finely chopped
  • 2 teaspoons sesame oil
  • 1 telegraph cucumber
  • 1 tablespoons toasted sesame seeds
  • 1 spring onion, finely chopped
  • 1/2 cup coriander leaves, chopped
  • 2 teaspoons white sugar

Method

  1. Step 1 of 7
    In a small jug, combine the lemon juice, soy sauce, fish sauce, ginger, sugar, sesame oil and chilli.
  2. Step 2 of 7
    Mix well and set dressing aside.
  3. Step 3 of 7
    To cut the cucumber into spirals, lie two wooden spoons on a bench and place the whole cucumber in between.
  4. Step 4 of 7
    Cut on a diagonal every 3-5 mm, then turn & roll the cucumber to the other side and cut again straight. Lift to reveal the spiral.
  5. Step 5 of 7
    Place the whole cucumber into a bowl and drizzle with the dressing.
  6. Step 6 of 7
    Garnish the cucumbers with a sprinkle of the sesame seeds, spring onion, and garnish with coriander leaves.

    Serve and enjoy!
