Easy Chorizo Baked Potatoes
Easy Chorizo Baked Potatoes are exactly that – easy! Perfect for a weeknight dinner or weekend lunch, this recipe is also tasty, being full of fried chorizo sausage pieces, garlic, spinach and creamy feta.
Ingredients
- 4 large potatoes
- 1 medium onion, finely chopped
- 1 clove garlic, crushed
- 2 chorizo sausages, chopped into small pieces
- 1 cup spinach, shredded
- 1 tablespoons lemon zest
- 100 grams feta, crumbled
- 1 tablespoons chives
- 2 tablespoons oil
- 1/2 teaspoons salt
- 1/2 teaspoons pepper

- 1 tablespoons lemon zest
- 100 grams feta, crumbled
- 1 tablespoons chives
- 2 tablespoons oil
- 1/2 teaspoons salt
- 1/2 teaspoons pepper
- Step 1 of 7Preheat an oven to 200˚C (180°C fan forced).
- Step 2 of 7Rub the potatoes with 1 tablespoon of oil, sprinkle with salt and bake for 1 hour or until soft when poked with a skewer. Remove and cool for 10 minutes.
- Step 3 of 7Slice the top off the potato, gently scoop out the inside without piercing the skin, and place it into a bowl. Set the tops aside. Roughly mash the scooped-out potato with a fork.
- Step 4 of 7Heat the remaining oil in a frying pan. Add the onion and garlic, cooking for 5 minutes to soften. Add the chorizo, frying for 8-10 minutes or until golden brown. Add the spinach to wilt, and the lemon zest. Mix win mashed potatoes & crumble in the feta and season.
- Step 5 of 7Refill the potatoes, piling it up if need be. Sprinkle with half of the chives.
- Step 6 of 7Place the potatoes back in the oven for 15-20 minutes until golden brown on top. Add the potato lids on the side to crisp up and eat like chips.
- Step 7 of 7Serve with remaining chives sprinkled on top.
