Espresso Overnight Oats
Wake up to these Espresso Overnight Oats. This easy breakfast combines creamy oats with a bold coffee topping and fresh strawberries.
Ingredients
- 1/4 cup honey
- 4 1/2 cups traditional rolled oats
- 4 1/2 cups milk
Espresso topping
- 1/3 cup caster sugar
- 1/4 cup instant coffee
- 250 grams strawberries, halved
- 1/4 cup cacao nibs
- 1/4 cup honey

- Step 1 of 3Place oats, milk and honey in a large airtight container or jar, mixing well to combine. Seal with lid. Refrigerate overnight to soak.
- Step 2 of 3To make espresso topping, whisk coffee, sugar and 1 1/2 Tbsp boiling water vigorously for 2 minutes or until mixture is very thick and light in colour.
- Step 3 of 3Spoon 1 1/2 cups oat mixture into a bowl. To serve warm, microwave oat mixture, stirring halfway, on high for 1 minute 15 seconds or until warmed through. Spoon espresso over oats and serve topped with strawberries and cacao nibs.
