Feijoa & Apple Cake

Ingredients

  • 2 cups self raising flour
  • 1 cup caster sugar
  • 1/2 tablespoons cinnamon
  • 1 tablespoons fresh ginger, grated
  • 1/2 cup water
  • 180 grams butter, melted
  • 3 eggs
  • 2 apples, peeled and sliced
  • 1 cup feijoa pieces

Topping

  • 50 grams butter, melted
  • 1/2 cup brown sugar
  • 1/4 tablespoons cinnamon
  • 1/2 cup yoghurt
  • 2 cups self raising flour
  • 1 cup caster sugar
  • 1/2 tablespoons cinnamon
  • 1 tablespoons fresh ginger, grated
  • 1/2 cup water
  • 180 grams butter, melted
  • 3 eggs
  • 2 apples, peeled and sliced
  • 1 cup feijoa pieces

Topping

  • 50 grams butter, melted
  • 1/2 cup brown sugar
  • 1/4 tablespoons cinnamon
  • 1/2 cup yoghurt

Method

  1. Step 1 of 6
    Preheat an oven to 170°C (150°C fan-forced grill). Line a 23cm tin with baking paper.
  2. Step 2 of 6
    Into a large bowl combine the flour, sugar, cinnamon and ginger.
  3. Step 3 of 6
    Whisk together the water, butter and eggs. Pour into the flour mix and stir gently until smooth.
  4. Step 4 of 6
    Fold through half the fruit and then pour into the tin. Arrange the remaining fruit on the top.
  5. Step 5 of 6
    For the topping, in a small bowl combine the butter, sugar and cinnamon. Spread carefully over the fruit. Place into the oven for 1 hour. Check after 45 minutes and if browning place a piece of tinfoil loosely over the top.
  6. Step 6 of 6
    Remove from the oven and cool in the tin. Serve with a dollop of Greek yoghurt.
