Feta, Crispy Bacon & Roasted Asparagus

Ingredients

  • 2 bunches asparagus
  • 2 rashers bacon, cut into small pieces
  • 100 grams feta
  • 1 lemon, squeeze & 1 tsp zest
  • 1 tablespoons olive oil
  • 1 pinch salt
  • 1 pinch pepper

Method

  1. Step 1 of 5
    Preheat an oven to 200°C (180°C fan-forced)
  2. Step 2 of 5
    Break the woody ends from the asparagus and place them into an ovenproof dish. Drizzle with the oil and roast for 15-20 minutes until tender when pierced with a knife.
  3. Step 3 of 5
    While the asparagus roasts, cook the bacon in a non-stick frying pan until crispy.
  4. Step 4 of 5
    Remove the asparagus from the oven, top with the bacon and crumble over the feta. Season with salt and pepper and return to the oven for 5 minutes to melt the feta.
  5. Step 5 of 5
    Serve hot with a sprinkle of lemon zest and a good squeeze of lemon juice.
