Grass-inspired Veggie Garden Brick Sandwiches

Ingredients

  • 63 grams light spreadable cream cheese
  • 250 grams cottage cheese
  • 2 carrots, grated and excess liquid squeezed
  • 8 slices dark rye bread
  • 8 lettuce leaves, ends trimmed
  • 1/4 punnet alfalfa

Method

  1. Step 1 of 4
    Reserve 2 tbs cream cheese. Process remaining cream cheese, cottage cheese and carrot until combined.
  2. Step 2 of 4
    Using a serrated knife, trim crusts from bread. Cut each slice into quarters (squares). Spread tops with reserved cream cheese.
  3. Step 3 of 4
    Top half of the bread squares with carrot mixture. Then sandwich with remaining bread squares.
  4. Step 4 of 4
    Fold each lettuce leaf into quarters and using cream cheese, press down to secure lettuce to sandwiches to represent grass. Top with alfalfa. Serve.
