Grilled Ham & Peach Salad
Whip up a fresh Grilled Ham & Peach Salad in under 20 mins. Use up leftovers with this quick, sweet & savoury Kiwi favourite.
Ingredients
- 1 tablespoons oil
- 4 peaches, stoned and halved
- 200 grams ham, thickly sliced
- 2 baby cos lettuce, washed and leaves separated
- 1/4 cup pistachios, shelled toasted and chopped
Dressing
- 2 tablespoons olive oil
- 1 tablespoons white balsamic vinegar
- 2 teaspoons honey
- 1 teaspoons wholegrain mustard
- 1 pinch salt and pepper
- 1 tablespoons oil

- Step 1 of 4Preheat grill plate on high and brush with 1 tablespoon of oil. Cook peaches, cut-side down for 1-2 minutes. Set aside.
- Step 2 of 4Cook ham in batches for 2-3 minutes each side, until charred. Tear into bite-size pieces.
- Step 3 of 4Arrange cos, peaches and ham in a serving bowl. Sprinkle with pistachios.
- Step 4 of 4To make the dressing, combine all dressing ingredients in a small jug. Season with salt and pepper to taste. Drizzle over salad.
