Grilled Ham & Peach Salad

Ingredients

  • 1 tablespoons oil
  • 4 peaches, stoned and halved
  • 200 grams ham, thickly sliced
  • 2 baby cos lettuce, washed and leaves separated
  • 1/4 cup pistachios, shelled toasted and chopped

Dressing

  • 2 tablespoons olive oil
  • 1 tablespoons white balsamic vinegar
  • 2 teaspoons honey
  • 1 teaspoons wholegrain mustard
  • 1 pinch salt and pepper
  • 1 tablespoons oil
  • 4 peaches, stoned and halved
  • 200 grams ham, thickly sliced
  • 2 baby cos lettuce, washed and leaves separated
  • 1/4 cup pistachios, shelled toasted and chopped

Dressing

  • 2 tablespoons olive oil
  • 1 tablespoons white balsamic vinegar
  • 2 teaspoons honey
  • 1 teaspoons wholegrain mustard
  • 1 pinch salt and pepper

Method

  1. Step 1 of 4
    Preheat grill plate on high and brush with 1 tablespoon of oil. Cook peaches, cut-side down for 1-2 minutes. Set aside.
  2. Step 2 of 4
    Cook ham in batches for 2-3 minutes each side, until charred. Tear into bite-size pieces.
  3. Step 3 of 4
    Arrange cos, peaches and ham in a serving bowl. Sprinkle with pistachios.
  4. Step 4 of 4
    To make the dressing, combine all dressing ingredients in a small jug. Season with salt and pepper to taste. Drizzle over salad.
