Healthier Blueberry Bran Muffins
These Healthier Bran Muffins are just that: healthier! But healthier doesn't mean boring 'cause these lunchbox heroes are also delicious. Prepped and baked in a half-hour, this is a quick and easy way to prepare for the school week.

Ingredients
- 2 cups bran flakes
- 1 cup plain flour
- 1 banana, mashed
- 1/4 cup runny honey
- 1 egg
- 1 cup reduced fat milk
- 1/2 teaspoons baking soda
- 20 grams olivani, melted
- 1 1/2 cups frozen or fresh blueberries

- Step 1 of 4Preheat oven to 180°C (160°C fan-forced). Lightly grease a 12 hole muffin tray.
- Step 2 of 4Add the bran flakes and flour into a large bowl. In another bowl add the banana, honey, egg, and milk. Add the baking soda to the olivani, then add to the other wet ingredients. Pour into the flour mixture, stirring gently to combine.
- Step 3 of 4Stir through the blueberries slowly so as not to over mix the batter. Spoon the mixture evenly into the muffin tin. Top with a few extra berries if desired.
- Step 4 of 4Bake for 20 minutes until just set in the middle. Remove from the oven and leave to cool in the tin.
