Healthier Sesame-Crusted Chicken with Slaw

Ingredients
- 3/4 cup brown rice-microwave
- 1/4 cup sesame seeds
- 1/2 teaspoons garlic powder
- 500 grams free range chicken breast fillets
- 1 teaspoons sesame oil
- 1/4 green cabbage, finely shredded
- 2 carrots, cut into matchsticks
- 150 grams snow peas, trimmed, thinly sliced lengthways
- 2 limes
- 1 1/2 tablespoons extra virgin olive oil

- Step 1 of 6Preheat the oven to 200°C (180°C fan-forced).
- Step 2 of 6Cook rice according to packet instructions.
- Step 3 of 6Meanwhile, combine sesame seeds and garlic powder in a medium bowl. Season with pepper. Add chicken, one at a time, to the sesame mixture and turn to coat.
- Step 4 of 6Heat 1 Tbsp olive oil in a large, non-stick ovenproof frying pan over medium heat. Cook chicken for 4 minutes on each side until golden brown. Transfer pan to oven and bake for 12 minutes or until chicken is cooked through. Thickly slice the chicken.
- Step 5 of 6Meanwhile, juice half a lime. Cut remaining limes into cheeks. Combine remaining olive oil, sesame oil and lime juice in a small bowl. Season with pepper. Place cabbage, carrot and snow peas into a medium bowl. Pour over half of the dressing and toss to combine.
- Step 6 of 6Serve chicken with slaw, rice, lime cheeks and the remaining dressing.
