Homemade Mince Pie
Serve up a fresh, flaky take on the classic mince pie. This budget-friendly, easy recipe is a total winner for a quick and tasty family dinner.
Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 1 tablespoons rosemary, finely chopped
- 250 mL beef stock
- 1 pinch salt
- 1 pinch pepper
- 1 egg, beaten
- 1 teaspoons flour
- 1 lemon, zest
- 3/4 cup frozen mixed vegetables
- 5 potatoes
- 2 carrot, cut into sticks
- 1 carrot, thinly sliced
- 1 tablespoons tomato paste
- 2 sheets puff pastry
- 500 grams beef mince
- 3 cloves garlic, finely chopped

- Step 1 of 5Preheat oven to 200ºC.
- Step 2 of 5Cut each pastry sheet into 4 equal squares and brush top of each with beaten egg. Put the squares on a tray, place in oven and bake for 5 minutes or until golden. Remove from the oven and cool.
- Step 3 of 5Heat oil over moderate heat in a deep frying pan and add onion, carrot, lemon zest, garlic and rosemary. Fry gently, without browning, until the onion is soft. Add mince, increase heat and fry, breaking up lumps as you go. Cook until mince is browned. Mix in flour and tomato paste then add the beef stock. Simmer for 10 minutes then add mixed vegetables.
