Kūmara, Avocado & Egg Salad

Ingredients
- 2 medium size kūmaras, thinly sliced
- 2 slices bread, cut into cubes
- 3 cups lettuce, shredded
- 1 avocado, diced
- 1/2 cup Italian parsley, chopped
- 1/2 cup aioli
- 1/4 cup natural yoghurt
- 1 tablespoons chipotle sauce
- 1 tablespoons lemon juice
- 4 eggs, boiled and halved
- 2 tablespoons olive oil
- 2 medium size kūmaras, thinly sliced

- 1 avocado, diced
- 1/2 cup Italian parsley, chopped
- 1/2 cup aioli
- 1/4 cup natural yoghurt
- 1 tablespoons chipotle sauce

- 4 eggs, boiled and halved
- 2 tablespoons olive oil
- Step 1 of 5Preheat an oven to 180˚C (160°C fan forced).
- Step 2 of 5Place the kūmara onto an oven tray. Drizzle with the olive oil and bake for 20-25 minutes until crisp and golden.
- Step 3 of 5Half way through cooking, add the bread cubes to the oven on another tray. Once done, remove both trays and allow to cool.
- Step 4 of 5To make the dressing, combine the aioli, yoghurt, chipotle and lemon juice.
- Step 5 of 5Into a large bowl, place the lettuce, avocado, chopped eggs, kūmara and croutons. Drizzle with the dressing and toss to serve.
