Kūmara & Bacon Fritters
Whip up tasty, golden kūmara and bacon fritters in under an hour. A quick, delicious dinner the whole family will love.
Ingredients
- 2 large kūmara, peeled and cubed
- 1 teaspoons oil
- 1 onion, chopped
- 2 rashers bacon, chopped
- 1/4 cup plain flour
- 1 cup silver beet, shredded
- 1/4 cup chopped coriander
- 1 teaspoons ground cumin
- 1/2 head lettuce, shredded
- 1 carrot, grated
- 100 grams feta, crumbled
- 1/2 cup mayonnaise
- 500 grams frozen fries, roasted until crunchy
- 2 eggs
- 2 pinches pepper
- 2 pinches salt
- 1/2 cup grated cheese

- Step 1 of 5Place kūmara into a pot of salted water. Cook for 10 minutes until softened. Drain and mash roughly.
- Step 2 of 5Heat oil in a frying pan over medium heat. Add onion and bacon cooking for 5 minutes until cooked and slightly browned. Add to the kūmara. Then add eggs, flour, cheese, silver beet, coriander, cumin, salt and pepper. Combine well.
- Step 3 of 5Heat oil in frying pan over medium heat. Spoon large tablespoons of mixture into the frying pan, cooking 3-4 minutes each side. Remove and keep warm while you cook the remainder.
- Step 4 of 5Combine lettuce, carrot and feta.
- Step 5 of 5Serve the fritters with salad, fries and sauce on the side.
