Kūmara, Carrot & Feta Fritters
Kūmara, Carrot & Feta Fritters is a budget-friendly recipe that also makes for an easy meal. Full of in season kumara and carrot, as well as feta, these hearty fritters are the perfect comfort food during the cooler months.
Ingredients
- 1 large orange kūmara, grated
- 1 medium carrot, grated
- 1 red onion, 1/2 grated and 1/2 sliced thinly
- 1/2 teaspoons salt
- 2 cloves garlic, grated
- 1/2 cup parsley, chopped
- 1 pinch chilli flakes
- 1/2 teaspoons cumin
- 100 grams feta, crumbled
- 1 tablespoons white wine vinegar
- 1/2 cup self raising flour
- 1 teaspoons oil
- 1/4 teaspoons salt
- 2 teaspoons caster sugar
- 2 eggs

- Step 1 of 4Firstly pickle the onions. Into a small bowl place the onion and salt, massaging together. Add the vinegar and sugar. Leave to sit for 15 minutes while you make the fritters.
- Step 2 of 4Into a large bowl mix together the kūmara, carrot, onion, garlic, parsley, chilli flakes, cumin, eggs, flour, salt and feta.
- Step 3 of 4Heat a little oil in a frying pan. Add a large tablespoon of mixture to the pan, cooking a few at a time for 3 or 4 minutes on each side. Remove and continue to cook the remainder.
- Step 4 of 4Serve warm with the pickled onions.
