Leftovers Ham & Courgette Fritters
Make the most of leftover Christmas ham and make brunch or lunch an easy task with this recipe for Ham & Courgette Fritters. These tasty, fresh fritters are best served with your favourite chutney.
Ingredients
- 2 courgettes
- 1/2 onion
- 1 clove garlic
- 2 eggs
- 1/2 cup parsley
- 1/2 cup tasty cheese
- 1/2 cup chutney
- 1/2 cup self raising flour
- 1 pinch salt and pepper
- 1 tablespoons butter
- 1 cup leftover chopped ham
- 2 courgettes

- Step 2 of 6Place it into a large bowl.
- Step 3 of 6Add the onion, garlic, eggs, parsley, cheese, flour, ham, salt and pepper, combining well.
- Step 4 of 6Heat the butter in a medium-sized frying pan to medium heat. Add large tablespoons of mixture cooking for 3 or 4 minutes before turning for 4 minutes until lightly golden and soft to the touch.
- Step 5 of 6Continue cooking the remainder.
- Step 6 of 6Serve with your favourite chutney.
