Mac & Cheese with Bacon

With bacon, onion and a touch of mustard, this macaroni and cheese recipe is a very tasty twist on a classic. Perfect for dinner but even better as leftovers for lunch.

Ingredients

  • 250 grams dried macaroni
  • 1 small onion, diced
  • 2 rashers bacon, chopped
  • 1 teaspoons Dijon mustard
  • 2 cups milk
  • 2 cups grated tasty cheese
  • 2 tablespoons chopped parsley
  • 50 grams butter
  • 1/4 cup flour
  • 1/4 teaspoons salt

Method

  1. Step 1 of 5
    Preheat an oven to 180°C.
  2. Step 2 of 5
    Cook the macaroni as per the packet instructions.
  3. Step 3 of 5
    Melt the butter in a medium sized pot. Add the onion and bacon cooking for 3-4 minutes to soften. Stir through mustard then add the flour, cooking for 2 minutes. Slowly add the milk a little at a time until all combined. Slowly bring to a simmer and cook until thickened.
  4. Step 4 of 5
    Add the salt, 1 1/2 cups of cheese and 1 tablespoon of parsley, stirring through. Spoon into your ovenproof serving dish. Sprinkle with the remaining cheese and chopped parsley.

    Bake for 15 minutes until golden brown. Serve while hot.
