Moroccan Chicken
Spice up your night with zesty Moroccan chicken. This convenient one-bag wonder is packed with chickpeas and fresh coriander.
Recipe Tip When preparing couscous, work a tablespoon of olive oil through the grains before adding water or stock as this helps to keep the grains separated.
Ingredients
- 390 grams canned chickpeas, rinsed and drained
- 1/3 cup coriander, roughly chopped
- 1 Moroccan flavoured split chicken
- 1 lime, cut in wedges
- 1 can tomatoes Moroccan style

- Step 1 of 6Preheat the oven to 200°C.
- Step 2 of 6Cut the chicken into 8 serving portions and place them in a large oven bag.
- Step 3 of 6Add the cans of Moroccan-style tomatoes and chickpeas and the chopped coriander.
- Step 4 of 6Close the oven bag and bake the chicken for 15 minutes.
- Step 5 of 6Lower the heat to 180°C and cook the chicken for a further 20 minutes.
- Step 6 of 6Serve with couscous and garnish with coriander and wedges of lime.
