Moroccan Meatballs with Couscous
Introduce friends, family or whānau to new tastes with these Moroccan Meatballs with Couscous. Our easy recipe is prepared and served in 30 mins – perfect for when you're short on time. Serve hot with a good dollop of yoghurt.
Recipe Tip To add more flavour and texture to the couscous, try adding some chopped walnuts or almonds.
Ingredients
- 400 grams beef mince
- 1/2 cup rolled oats
- 2 tablespoons moroccan spice
- 1 clove garlic, crushed
- 1 cup mint, chopped
- 1 egg
- 1 cup natural yoghurt
- 1/2 teaspoons pepper
- 1/2 teaspoons salt
- 2 tablespoons oil
Couscous
- 1 cup couscous
- 1/2 cup sultanas
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 400 grams beef mince
- 1/2 cup rolled oats
- 2 tablespoons moroccan spice
- 1 clove garlic, crushed
- 1 cup mint, chopped
- 1 egg
- 1 cup natural yoghurt
- 1/2 teaspoons pepper
- 1/2 teaspoons salt
- 2 tablespoons oil
Couscous
- 1 cup couscous
- 1/2 cup sultanas
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- Step 1 of 4Into a large bowl, place the mince, oats, half the spice, garlic, half the mint, egg, salt and pepper, mixing well. Roll into walnut-sized balls and cover until ready to cook.
- Step 2 of 4For the couscous, pour into one cup of boiling water, cover and let it sit for 10 minutes. Loosen it with a fork. Add the remaining spice, mint and sultanas. Stir through the oil and lemon juice.
- Step 3 of 4To cook the meatballs, heat the oil in a large frying pan. Add the balls browning on all sides and cook for 10-12 minutes until cooked through.
- Step 4 of 4Serve hot on the couscous with a good dollop of yoghurt.
