Mummy Pockets

Spook up snack time with healthy Mummy Pockets. This easy 30-min Halloween recipe is packed with fresh tuna and crisp veggies.

Ingredients

  • 190 grams tuna in springwater, drained
  • 200 grams low fat cottage cheese
  • 2 tablespoons chopped parsley
  • 2 cucumbers, cut into strips and rings
  • 2 carrots, cut into strips and rings
  • 200 grams Pad Thai rice noodles
  • 16 black olives, sliced
  • 1/2 cup sweet chilli sauce
  • 190 grams tuna in springwater, drained

  • 2 cucumbers, cut into strips and rings
  • 2 carrots, cut into strips and rings
  • 200 grams Pad Thai rice noodles

  • 1/2 cup sweet chilli sauce

Method

  1. Step 1 of 4
    Combine tuna, corn, cheese and parsley in a bowl, and mix.
  2. Step 2 of 4
    Heat pita following packet directions, then cut each in half to make 8. Fill with tuna mixture.
  3. Step 3 of 4
    Overlap carrot and cucumber strips on top of pitas. If using rice noodles, soak in boiling water until softened. Dry well. Lay over the top of the pocket and trim edges.
  4. Step 4 of 4
    Add cucumber, carrot and olives for eyes. Drizzle with sweet chilli sauce.
