Nectarine & Ricotta Bruschetta

From a platter to an afternoon snack or a fresh breakfast, Nectarine & Ricotta Bruschetta is a great way to enjoy fresh nectarines and also a summer's day. Just slice, grill, spread and serve.

Ingredients

  • 2 cloves garlic, grated
  • 250 mL ricotta
  • 2 teaspoons lime zest
  • 2 nectarines, cut into slices
  • 1/4 cup slivered almonds, toasted
  • 1 lime, to squeeze
  • 1 tablespoons runny honey
  • 8 slices sourdough bread
  • 1 tablespoons oil

  • 2 nectarines, cut into slices

  • 1 lime, to squeeze

Method

  1. Step 1 of 5
    Brush the bread with oil.
  2. Step 2 of 5
    Heat a grill or frying pan to medium heat and toast the bread until golden brown. Remove and cool.
  3. Step 3 of 5
    Rub the garlic over the bread.
  4. Step 4 of 5
    Combine the ricotta and zest. Spread generously over the toast. Top with nectarine slices, a sprinkle of nuts and a good squeeze of lime.
  5. Step 5 of 5
    To serve, drizzle over some honey and add a few mint leaves.
