Oaty Carrot Cookies
These cookies are perfect for the lunchbox, or an afternoon treat!

Ingredients
- 1 egg yolk
- 1 teaspoons ground cinnamon
- 1 cup rolled oats
- 1/2 cup carrot, coarsely grated
- 1 1/2 cups plain flour
- 1/2 teaspoons baking soda
- 125 grams butter, softened
- 1 cup brown sugar, firmly packed
- 1 tablespoons milk

- Step 1 of 6Preheat oven to 180°C. Grease 2 oven trays and line with baking paper.
- Step 2 of 6Beat butter, sugar and egg yolk in a small bowl with an electric beater until combined. Transfer to a medium bowl. Stir in carrot.
- Step 3 of 6In a separate bowl, combine sifted flour, baking soda and cinnamon.
- Step 4 of 6Add dry ingredients to wet ingredients and stir to combine. Add oats and enough milk to make a firm dough.
- Step 5 of 6Using damp hands, roll heaped teaspoons of the mixture into balls. Place balls 5cm apart on trays; flatten into 3cm rounds.
- Step 6 of 6Bake for 15 minutes or until golden; cool on trays.
