Oaty Carrot Cookies

Ingredients

  • 1 egg yolk
  • 1 teaspoons ground cinnamon
  • 1 cup rolled oats
  • 1/2 cup carrot, coarsely grated
  • 1 1/2 cups plain flour
  • 1/2 teaspoons baking soda
  • 125 grams butter, softened
  • 1 cup brown sugar, firmly packed
  • 1 tablespoons milk
  • 1 egg yolk
  • 1 teaspoons ground cinnamon
  • 1 cup rolled oats
  • 1/2 cup carrot, coarsely grated
  • 1 1/2 cups plain flour
  • 1/2 teaspoons baking soda
  • 125 grams butter, softened

  • 1 tablespoons milk

Method

  1. Step 1 of 6
    Preheat oven to 180°C. Grease 2 oven trays and line with baking paper.
  2. Step 2 of 6
    Beat butter, sugar and egg yolk in a small bowl with an electric beater until combined. Transfer to a medium bowl. Stir in carrot.

    In a separate bowl, combine sifted flour, baking soda and cinnamon.
  4. Step 4 of 6
    Add dry ingredients to wet ingredients and stir to combine. Add oats and enough milk to make a firm dough.
  5. Step 5 of 6
    Using damp hands, roll heaped teaspoons of the mixture into balls. Place balls 5cm apart on trays; flatten into 3cm rounds.

    Bake for 15 minutes or until golden; cool on trays.
