Peach & Yoghurt Muffins

Fill lunchboxes and tummies with these tasty Peach & Yoghurt Muffins! This baked treat is out of the oven in only 20 minutes, making for a quick and easy lunchbox filler, which can also be prepared earlier in the week.
Recipe Tip Well-drained canned peaches work well if you don't have fresh.

Ingredients

  • 1 1/2 cups self raising flour
  • 1/2 cup desiccated coconut
  • 1/4 cup sugar
  • 1 egg
  • 1 cup unsweetened yoghurt
  • 25 grams butter, melted
  • 1 teaspoons vanilla essence
  • 1 cup peaches, roughly chopped, skin on
  • 1/2 teaspoons cinnamon
  • 2 teaspoons sugar
  • 1 1/2 cups self raising flour
  • 1/2 cup desiccated coconut
  • 1/4 cup sugar
  • 1 egg
  • 1 cup unsweetened yoghurt
  • 25 grams butter, melted
  • 1 teaspoons vanilla essence
  • 1 cup peaches, roughly chopped, skin on
  • 1/2 teaspoons cinnamon
  • 2 teaspoons sugar

Method

  1. Step 1 of 6
    Preheat the oven to 200°C (180°C fan-forced).
  2. Step 2 of 6
    In a large bowl place the flour, coconut and sugar.
  3. Step 3 of 6
    In a jug combine the egg, yoghurt, butter and vanilla.
  4. Step 4 of 6
    Pour wet ingredients into the dry ingredients and mix gently to combine. Fold through the peaches. Spoon the batter evenly into the muffin cases.
  5. Step 5 of 6
    For the topping, combine the cinnamon and sugar. Sprinkle onto the top of the muffins.
  6. Step 6 of 6
    Bake for 20 minutes until lightly browned and spongey to the touch. Remove from the oven and place muffins on a cooling tray.
