Peach & Yoghurt Muffins
Fill lunchboxes and tummies with these tasty Peach & Yoghurt Muffins! This baked treat is out of the oven in only 20 minutes, making for a quick and easy lunchbox filler, which can also be prepared earlier in the week.
Recipe Tip Well-drained canned peaches work well if you don't have fresh.
Ingredients
- 1 1/2 cups self raising flour
- 1/2 cup desiccated coconut
- 1/4 cup sugar
- 1 egg
- 1 cup unsweetened yoghurt
- 25 grams butter, melted
- 1 teaspoons vanilla essence
- 1 cup peaches, roughly chopped, skin on
- 1/2 teaspoons cinnamon
- 2 teaspoons sugar
- 1 1/2 cups self raising flour

- Step 1 of 6Preheat the oven to 200°C (180°C fan-forced).
- Step 2 of 6In a large bowl place the flour, coconut and sugar.
- Step 3 of 6In a jug combine the egg, yoghurt, butter and vanilla.
- Step 4 of 6Pour wet ingredients into the dry ingredients and mix gently to combine. Fold through the peaches. Spoon the batter evenly into the muffin cases.
- Step 5 of 6For the topping, combine the cinnamon and sugar. Sprinkle onto the top of the muffins.
- Step 6 of 6Bake for 20 minutes until lightly browned and spongey to the touch. Remove from the oven and place muffins on a cooling tray.
