Prawn Platter with Cocktail Sauce
Your next get-together needs a refreshing Prawn Platter! Jumbo prawns, crisp baby cos lettuce, and avocado come together with a fresh lemon dressing. Plus, make your own cocktail sauce to go with it. Simple and ideal for any occasion.
Recipe Tip Cocktail sauce can be made up 2 days ahead and refrigerated in an airtight container. Prawns can be shelled a day ahead and refrigerated.
Ingredients
- 1/4 cup fresh chives, chopped
- 4 baby cos lettuces, cut into wedges, or loose baby leaf lettuce
- 4 small avocados, cut into wedges
- 2 teaspoons lemon, finely grated lemon rind
- 3 kilograms cooked jumbo prawns, de-veined with tails intact
- 1/4 cup micro herbs
- 1/3 cup extra virgin olive oil
- 1 pinch salt
- 1 pinch pepper
Cocktail sauce
- 2/3 cup whole-egg mayonnaise
- 1/2 cup lemon juice
- 1 cup crème fraîche
- 1 1/2 tablespoons tomato sauce
- 1 teaspoons worcestershire sauce
- 1 teaspoons Tabasco sauce
- 1/2 teaspoons sweet paprika
